Let's dive a little deeper...

Xanthan gum is one of the most commonly utilized emulsion stabilizers. Small amounts can act as a thickening agent and turn runny products more gel-like. When Xanthan gum is used alone, it may cause the formula to become sticky. Still, it works harmoniously when combined with other thickeners and rheology modifiers. The standard use level of Xantha Gum is below 1%, usually in the 0.1-0.5% range. 


Xanthan gum is all-natural, a chain of sugar molecules delivered from particular sugar molecules via fermentation. It's approved by Ecocert and used in the food industry (E415).
